Sweet Potato Lore and Varieties

Sweet potatoes - the prehistoric Ipomoea batatas - are grown often in Louisiana and North Carolina and different from yams -Dioscorea Species - which are usually long and gnarly looking in Caribbean tropical climates - kind of like large tree roots - and can also have moist, orange flesh. In the tropics, the yam is nicknamed after the male anatomy.

Sweet potatoes display yellow or orange flesh and taste different than yams. The potato skin will be any of white, yellow, orange, red, or or even purple. I've never seen the red ones, but the orange are sometimes deep orange and almost red to my eye..

Sometimes shaped much like Michigan potatoes, the sweet potato often is longer, with pointy ends.

VARIETIES OF SWEET POTATOES

  • Beauregard - Developed at Louisiana State University as a high-yield crop of good-tasting quality. I've had the canned variety and they are very tasty.
  • Bush Porto Rico - Never seen one, but they are said to be very good.
  • Georgia Jet - Red! - Never seen one. Have you?
  • Jewell - We have these in some of our groceries in the Midwest.
  • Sumor - These will grow where Irish potatoes grow and look like yellow potatoes.
  • Vardaman - This is what we always seem to have in stores. At Thanksgiving, they are reduced to from 35 to 50 cents per pound. Other times, they can cost up to $2.00/pound.

Please enjoy the collection of sweet and savory sweet potato recipes provided below.

Famous Singer Makes Pie

Patti Labelle's sweet potato pies sell at some WalMart stores for under $3.50. James Wright Chanel, a food critic, spent Thanksgiving 2015 with the famous singer and her pies after he could not find any in stock at his local WalMart.

Sweet Potato Pie With Meringue

To me, this pie is a meal in itself. When I make it, I eat it with a salad and iced tea.

INGREDIENTS

  • 2 ROOM TEMPERATURE whole eggs, slightly beaten
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1 teaspoon grated orange zest
  • 1 3/4 Cups milk
  • 2 1/2 Cups peeled and grated sweet potatoes
  • 1 Tablespoon butter or margarine, melted
  • 1 9-inch UNBAKED pie shell

MERINGUE

  • 3 ROOM TEMPERATURE (set out for an hour before separating) egg whites
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • 6 Tablespoons sugar - white or lite brown, or use HONEY instead

INSTRUCTIONS

  • Combine eggs, sugar, salt, nutmeg, cinnamon, orange zest and milk. Stir. Add the sweet potatoes and then butter.
  • Pour into pie shell and bake in 400 Degree F oven about 30-40 minutes, or until a knife inserted in the center comes out clean.
  • Meringue: Put egg whites in a bowl with cream of tartar, salt and vanilla.
  • Beat at medium speed with an electric mixer until frothy, not stiff.
  • Add sugar gradually, beating well after each addition and avoid under-beating - keep beating until sugar dissolves or the meringue will ooze moisture later. Beat until stiff, pointed peaks occur when you take the beaters out. If you do this by hand, it will take a lot more work.
  • Place spoons of meringue around the edges of the pie, spreading to touches inner edge of crust all around the circumference to seal it off in order to prevent shrinkage.
  • Spoon remaining meringue in middle of pie and spread carefully to meet meringue around edge. The entire surface of the pie must be covered.
  • With the back of a spoon or small spatula, lift the meringue gently all over to make points.
  • Bake at 350 Degrees F for 12 minutes or until peaks are golden brown.
  • Remove and cool on a cooling rack and serve.

Patti--

Great Hub as usual! I love Sweet Potatoes just about any way you can fix them--and they're good for you! Try simply baked with a little butter--yummy! Or as oven-baked fries--so good!

OK, now you've made me hungry! I'll have to fix some for dinner tonight!

Great stuff! Have you ever tried to grow a sweet potato plant by rooting it in a cup of water? It's fun to watch it sprout. Just prop it up on the lip of the glass with some toothpicks. After the roots get stronger, you can plant it in the ground or a pot.

Woonderful comments! Thanks RUTHIE17 and flutterbug77.

I remember Captain Kangaroo growing a sweet potato vine. Those oven baked sweet potatoes sound great, too.

Awesome! I'll have to try the sweet potato pie on the same night I try your butter pie recipe! Or maybe the shepherd's pie? Or maybe we should petition for a national pie week, and try them all at once!

Thank you Friends of Pie! Pie, PI, 3.14...ad infinitum

Yes, we must have National Pie Week and I think there is already such a thing, but I will look it up.

kevin - I will think of you eating your pie!

I found national pie day. Only 1 day? And it's not until January 23rd. Wonder how many pies I can make, and store by then.

Hmmmm. I think we should declare a National Hub Pages Pie Week for later in the summer and do a Hub request for favorite pie recipes. What do you think? B.T. Evilpants might make the request for us - or does he bake pies that we do not know about?

B.T. Evilpants profile image

For National Hub Pages Pie Week, I would request Pasticchio. It's a classic Italian pie, filled with tortellini, meatballs, and bechamel sauce. How could anyone resist!?

Amazing! When shall National Hub Pages Pie Week be slated?

B.T. Evilpants profile image

B.T. Evilpants 8 years ago from Hell, MI

That depends. How long will it take you to make, and send me, all those pies? I only require one of each, I'm not greedy.

Not greedy? -- You ought to be a guest judge on Iron Chef! or HELL's KITCHEN.

I'm so glad you did this hub, I never know how to fix these potatoes and they are sooo good for us! Patty, are you sure you can't come over to my house and re-arrange my kitchen and fill my refrigerator with all these goodies? I'll chop and sample as you cook, deal? I'll even clean up. =)

I do like Hell's Kitchen, but chef Ramsey is a little too sweet for my taste. They really need someone more arrogant, and opinionated for that show. Perhaps you're right, I might fit the bill, nicely!

Also, if you include pocket pies in the pie week celebration, consider the humble cornish pasty. Meat (preferably not Jackalope), potatoes, and rutabaga in a folded pie shell. I've read that you spend some time in Michigan. They're quite popular, here.

Patty Inglish, MS profile image

Patty Inglish, MS 8 years ago from North America Author

Mr. nicely arrogant B.T.Evilpants - Pasty - YES YES YES! Delicious - had some on a camping trip to Mackinack Island two years ago. So, Ramsey needs to be replaced by Jackalope or Anthony Bourdain. Do you and Anthony travel together at all? Together, you could operate "Cuisine by BootCamp or Die."

Marisuewrites - It's a possibility. I must see in what corner of the world you live. :) You know that Jackalope and Bourdain will be watching us for culinary slip-ups!

dayzeebee - I hated sweet potatoes as a child, because they always had tons of pancake syrup and sugar cooked into them and burnt marshmallows on top. Now I love them in these recipes!

marisuewrites - Tampa Bay! What fun! - I have not been to Forida since I was 2 yrs old. I remember a rainy pickup truck ride down there and eating at a fun diner with a juke box. That's all. :)

I love sweat potatoes. I simply cut them up and fry them for sweat potato fires. I also like baking them and adding caramel and marshmallo on top.

This is a food group unto itself if you ask me. I always thought yams and sweet potatoes were the same thing - that yams were what the north called the southern sweet potato. Goes to show what I know.

My favorite way to eat them is just baked with butter on them. I could eat a plate full. :)

Patty Inglish, MS profile image

Patty Inglish, MS 7 years ago from North America Author

RGraf! - Sounds good. I also like them with papper and butter and sometimes ginger and some other spices. They were always too sweet for me with syrup, sugar, and marmallaws (I couldn't even swallow them).

I know what I do with sweet potatos, Throw them away. They are one of the few foods I don't like.

I always wondered if sweet potatos and yams were the same thing. I don't like them either.

I love sweet potatoes. I love them mashed, in chips and any other way someone can think of making them. I even have the very model of ocarina that is illustrated in your article here. Alto C triple. What you pictured is not the maker of mine. Mine is a Soloist but the one you have is very high quality too. Imagine sweet potatoes and music two of my favorite things in one article. Wonderful. Loved your hub. Bob Smith.

Thank you for such an uplifting response to his Hub. I, too, have discovered a variety of ways to enjoy sweet potatoes as food - without so much sugar as some cooks used in past years. Long ago, I had a sweet potato instrument as a child, but it escaped me, unfortunately. Captain Kangaroo used to play the sweet potato on TV, I remember.

Really? wow. Maybe I can find that video on YouTube. I would love to share that with my friends on Facebook. The Captain meant so much to all children and I was no exception. Thank you. I can't imagine my life without the ocarina now. Hopefully, the Lord will enable my fingers to continue to move into the last years of my life. So many people lose the use of their hands but I am hoping for God to keep blessing them. Thank you so very much.

Keep your fingers moving a little every day and it will be easier to keep them moving for even longer into your years.

I've never seen a video online of the Captain playing an ocarina, but maybe someone else has. I remember it distinctly, because it was the first time I'd ever heard one. Then I bought one at the toy store.

I have been looking now and I don't know how to ask YouTube. It is such a specific thing. I will just keep looking and I may stumble upon it. I do keep practicing everyday. With the ocarina and the computer keyboard, my fingers keep busy (not to mention running around and tickling my wife, lol)

That is what marriage is all about. Of course it is the mutual support and the mutual reassurance and the mutual respect and the mutual... But tickling is an important part of play. This Halloween it will be 16 years. She is my very best friend in all the world and I never tire of being around her, the love of my life.
