Sweet and sour mango chatani (sauce)

Ingredients:--
- 2 big raw mangoes
- turmeric powder 1 1/2 tsp
- 30 gms mustarted seed powder
- mustarted seeds 1 tsp
- Edible lime(chuna from pan walas)1 1/2 tspginger paste 10 gms
- salt to taste
- mustarted oil 150 gms
- meethi seeds (fenugreek seeds)20 gms
- Method :-
- first peel the mangoes and cut them in cubes remove the seed
- cut the cubes into lices
- apply lime paste (chuna)to the sliced mano pices
- keep them aside for one hour and then wash them in water
- leave them to dry
- In a wok put the oil and put fenugreek seeds mustarted seeds then put the sliced mango pieaces
- stir the content and then cover it with a plate
- after some time put sugar tumeric powder grounded mustarted seed powder ginger paste and all the other masalas kept for the sauce
- as soon and the mangoes become soft remove it from fire
- pour in in a china clay pot ,it can stay good for many days and can be used to enhance the take of the food
