Tangy Sweet Potato Soup
A homemade recipe
I had a wedding party to go to and it was a costume party at that. I wanted something light to bring and since it was really chilly outside for August (65 degrees) and the party was at night, I decided on soup. I love making up my own recipes and making easy, quick ones; so below, you will find a very quick and easy but yummy tasting soup. Not meant for a main course mind you, as it isn't filling enough. Great for an appetizer.
Ingredients:
2 packages (found in 1 box) of Betty Crocker instant sweet potato
1 can of Baxter's carrot and coriander soup
1 box of Rice A Roni Whole Grain Brown Rice & Orzo; Roasted Garlic Italiano mix
1 cup fresh pineapple juice
3 cups fat free milk
1/4 cup olive oil
2 cups water
1 tablespoon of garlic powder
1 teaspoon each of ground coriander, chili powder, cilantro, ginger, paprika and Chinese five spice
Put all of the ingredients in a large soup pot and cook over medium heat until the rice and orzo is soft. This is about 20-25 minutes. Serve immediately if preferred but also tastes great warmed up as a leftover.
Not only is this healthy, it is very low in calories and low in fat too.
