Tasty Chicken Taco Casserole Recipe


Chicken, tacos, and casserole all taste wonderful own their own, and together they taste marvelous! This recipe is perfect combination of nachos, chicken, taco, and casserole. It's perfect for a mexican themed family dinner, you can have it with salad and tortilla chip with plenty of salsa.



  • 3 lbs chicken parts
  • 1 1/3 cup corn chips
  • 1 1/4 cup canned enchilada sauce ( you can choose mild or hot)
  • 1 1/14 cup condensed cream of mushroom soup
  • 1 1/2 cup chopped onion
  • 1/2 tsp garlic salt
  • 1 cup monterey jack cheese (grated)
  • 1 1/3 cup corn chips
  • 1 cup reserved chicken broth


  1. Preheat the oven to 350 F
  2. Boil chicken in a big saucepan. Cook for about 45 minutes (or until tender). Place aside 1 cup of the boiled chicken broth. If using chicken parts with bones, remove the skin and bones. Cut the chicken into bite sized pieces (you should have 3 1/2 cups of chicken).
  3. Inside of a 9x9 inch pan spread the first 1 1/4 cup of corn chips.
  4. combine the enchilada sauce, mushroom soup, chopped onion, and garlic salt in a bowl. Now add the chicken and mix well. Pour the mixture over the corn chips in the pan.
  5. Sprinkle the cheese over the chicken mixture in the pan, then add the remaining 1 1/4 cup of corn chips.
  6. Bake ( uncovered) in the oven for 45- 60 minutes.
  7. Enjoy!
