Tempura Grilled Tilapia
Here is a recipe that you will find in Thailand and in some places on the west coast of the United States. The recipe is a little involved but it is well worth the effort both for the taste of the fish and the great presentation this fish makes at the table.
You cook your tilapia in this recipe in a two step process. You want to start with the below recipe for tempura batter.
Tempura Batter Recipe
1. 4 Large Eggs well beaten with a hand mixer.
2. 4 Cups Self Rising Flour.
3. 2 Cups Icy Cold Water.
Mix your eggs up first until they are well beaten and frothy. Now add in your flour and water and mix with the hand mixer until they are very well mixed. Your batter should have a multitude of bubbles in it if its well beaten.
Now you will want to heat your deep fryer to 350 degrees and now you want to dip your whole tilapia into the batter one at a time being sure to get your tilapia covered on all sides. Shake excess batter off of the tilapia and gently drop each tilapia into the deep fryer and cook each until it is golden brown. You just want them to be golden brown all over but you don't have to really finish cooking them as we are going to finish ourr tilapia on the grill.
You want your grill to be pre heated and as soon as each tilapia comes out of the deep fryer drain it well and place it on the grill. Cook your tilapia on the grill until you are sure they are done. Don't turn to often but do turn them. When you are ready to serve your fish have the below fish sauce already made and dip some over each tilapia.
Tilapia Fish Sauce
1. 2 Tablespoons Minced Fresh Garlic.
2. 1 Cup Chicken Broth.
3. 4 Tablespoons Lime Juice.
4. 4 Tablespoons Brown Sugar.
5. 1/3 Cup Vietnamese Fish Sauce.
6. 1 Tablespoon Ground Cayenne Pepper.
7. 1 Teaspoon Ground Sea Salt.
You want to mix all your ingredients together and then blend them in a blender. Now you will want to pour into a small pot and heat thoroughly.
Now you are ready to make one of the most delicious tilapia dishes that you will ever eat. For a really pretty presentation take zucchini and mushroom slices and dip them in the tempura batter. Deep fry your vegetables and serve a small serving of the tempura vegetables with each tilapia. You can serve hot buttered white rice along with the fish and tempura vegetables for a complete meal. Serve a small dish of the fish sauce you made on the table for extra dipping.
I have at times really made this dish special by frying tempura vegetables and stuffing the fish with it. I have also at times fried tempura oysters and shrimp and stuffed my tempura grilled tilapia with these.
