Over the years I have made these delicious pancakes and people have quite often asked me for the recipe but in the past I always said no. But now I'm going to share with you the recipe for the best pancakes you will ever eat. And because I'm going to be sharing the secret with you I'm going to tell you. Cornmeal is the secret to these delicious pancakes. And while there are some other things you need to do cornmeal really does give these pancakes their own unique taste.

If your going to be making pancakes on a regular basis I suggest you purchase your own small electric grill or griddle to cook your pancakes on. Another big secret to making delicious light pancakes is to let your pancakes cook on the one side until they are brown on the bottom side and bubbles are showing up on the uncooked side. You don't want your pancakes to burn but you do want them to brown on the one side to a delicious golden brown and start sending lots of bubbles up to the uncooked side before you flip your pancakes over on the grill or griddle. Ideally you shouldn't have to flip your pancakes over but one time. If you have your grill or griddle at the right temperature and you learn when to flip your pancakes you won't have to flip them but that one time.

Do not ever smack or mash your pancakes with your spatula. If you do you will have tough pancakes. And they will never be light and fluffy. Here is the recipe for the best pancakes you will ever eat. Keep in mind that the cornmeal is the secret to these pancakes. I use all purpose plain flour in these pancakes and self rising cornmeal. This produces pancakes that will truly be the best pancakes you will ever eat as long as you have read and understand the above instructions for making pancakes.

For Your Pancakes You Will Need.

1. 2 Cups Plain All Purpose Flour.

2. 2 Cups Self Rising Cornmeal.

3. 3 Cups Of Buttermilk.

4. 1 Tablespoon Baking Powder.

5. 1 Tablespoon Baking Soda.

6. 4 Tablespoons Vegetable Oil.

7. 1/4 Cup Of White Granulated Sugar.

8. 2 Large Eggs.

9. 2 Tablespoons Brown Sugar.

What I like to do is mix my pancake mix up in my blender. I blend it in my blender until I know for sure that everything is very well mixed together and I use the blender to pour my pancakes out on my grill once I know it is hot enough. If you sprinkle a few drops of water on your griddle and it dances and sizzles then you will know its at the right temperature to cook your pancakes.

You can pour the batter out on your grill that you have sprayed with vegetable cooking spray and let your pancakes cook until they are golden brown on the bottom and your seeing bubbles coming up on the uncooked side of your pancakes before you flip your pancakes over. If you do it right you will be rewarded with light fluffy pancakes that will be oh so tasty and delicious.
