What could be better than a nice bowl of soup on a cold day. These are the best low fat vegetarian recipes for soup I have tasted. Soup is great with sandwiches for lunch because it gives you a nice full feeling.

Easy Potato Soup

Potato Soup

5 medium potatoes, peeled and choppped

3 cups of water

1 medium onion, chopped

2 stalks celery, chopped

2 cups frozen corn

2 medium carrots, peeled & chopped

1 cup soy or almond or coconut or rice "milk"

1 t. salt

1/4 t. pepper

Method 1

Using a crockpot, combine all ingredients and cook until tender (low for all day; high one hour, then low for 3 or 4 for half day). Mash to desired thickness and texture, mix. Serves 6

Method 2

Boil 3 cups water and add potatoes and carrots and cook about 20 minutes, until tender. Mash potatoes and carrots in the pot of water. While potatoes are cooking, fry onions and celery in a small amount of vegetable oil, until tender. Add all remaining ingredients to the soup pot. Serves

Chickenless Rice Soup

I make this soup more than any other. It is a family favorite--and delicious! This will quickly make your list of best vegetarian recipes for soups. It is easy to make in a crock pot, so that's how I wrote the recipe.

1/2 cup yellow split peas

8 cups water

1 faux chicken bouillon cube

3/4 cup brown rice

2 carrots, peeled, sliced

2 stalks celery, sliced

1 cup frozen peas

1 small onion, chopped

1 clove garlic, minced

1 bay leaf

1/2 teaspoon turmeric

1/4 cup parsley

2 teaspoons soy sauce

1/2 teaspoon salt

1/3 cup nutritional yeast* (optional)

For a lunch soup: the night before, in a crock pot, place washed yellow split peas, water, salt, and turmeric and cook overnight on low. In the morning add remaining ingredients. Cook on high one hour, then, low.

For a dinner soup: put all ingredients in the to crock pot in the morning and keep on low all day.

* Nutritional yeast is yellow in color and is a good source of protein and B-complex vitamins. You can find this at whole food stores or order it online (try Bob's Red Mill). Serves 6


This is similar to a vegetable soup but with beans and pasta added. You will soon be calling this one of the best vegetarian recipes for low-fat soup you've ever eaten.

1 cup dried beans (any)

4 cups water

2 vegetable bouillon cubes

1 16-oz. can crushed or chopped Italian-style tomatoes

1 stalk celery, chopped

1/2 small onion, chopped

1 clove garlic, minced

1 cup chopped veggies

1 tablespoon basil

1/2 teaspoon thyme

1/2 teaspoon salt

1/4 teaspoon pepper

1/3 cup dry pasta

For a lunch meal, the night before, thoroughly wash beans and place in water with spices and bouillon cubes to cook in a crock pot on low overnight. Add all remaining ingredients and cook on low for 4 more hours.

For a dinner soup, in the morning thoroughly wash beans and place in water with spices. Then, cook on low all day. Add pasta and vegetables and cook on high for one hour or until vegetables are tender, then serve. Serves 3

Thanks for the recipe Ms. Stevens. Can I substitute anything for parsley? I can't always find it, and think I might be allergic.

Celery tops would be similar in taste to parsley, but you can make the recipe without parsley. It will still taste good.
