Let’s get straight to the point here; this is the most delish raw vegan mayo ever! Even if you are by no means a raw vegan, or even a vegan for that matter. You will still love this mayo! Unless of course you happen to have a nut allergy. Then, you should probably skip this recipe, or just pass it on to a friend who does not have a nut allergy. You can use this mayo as a dip; you can use it as a salad dressing and as a filling in a sandwich. It is satisfying and is much healthier than the traditional mayo. Give it a try, you might just like it. I also forgot to mention that it is the easiest thing in the world to make. No special culinary skills are required to make this amazing mayo sauce. So, get stuck in! Okay, and if you do not have a food processor, you could possibly do this in the blender. If you have neither well, you might want to get one or the other.
Here is what you need to make this delish delish mayo (get a pen, print it out or just remember it)
1 cup cashews, soaked for about 3 hours
1 cup filtered water, not too cold and not too hot
¼ cup coconut oil
2 tablespoons olive oil
¼ teaspoon ground mustard seeds or mustard powder
2 teaspoons lemon juice
¼ teaspoon salt
¼ teaspoon minced garlic (you do not have to add this, it is optional)
There really is nothing to it when it comes to making this cashew mayo. It really is a case of putting the cashews in the food processor with 1 cup of water, blending everything until smooth. Then, you can go ahead and add the rest of the ingredients and blend again, until smooth. You will be surprised at how rich and creamy, and delicious this mayo is! Look at my face in the picture, I am smiling and I just had a tortilla wrap with salad and cashew mayo! Lovely!
