How to Make the Perfect Pizza Dough Like Your Favorite Pizzeria

A Simple, Easy Pizza Dough Recipe

This pizza dough recipe is my standard. I have used it dozens of times for pizza, calzones, and stromboli. It has the perfect level of chewiness, and tenderness.

Ingredients

  • 1 1/4 cups warm water
  • 1 tsp yeast
  • 1 tsp salt
  • 1 1/2 tbsp sugar
  • 1 tbsp olive oil
  • 1 cup all purpose flour
  • 2 cups bread flour

Directions

Mix the first five ingredients. Then add the flour. Mix to form a soft dough that should be a little sticky (but not wet). Knead for 7-10 minutes by hand or 5 minutes with a stand mixer. Allow the dough to rise 1 1/2 hrs at room temperature. Punch the dough down, shape into a ball, and place in a bowl or air tight container. Cover the dough directly with plastic wrap so its surface doesn't dry out. Place in the refrigerator for at least 12 hrs, preferably 24 (this develops flavor). Before use let the dough come to room temperature.
