The loading dock is a popular place in Grafton Illinois. It is known for their homemade salsa. This salsa is so fresh tasting- that once you make this salsa recipe- you will make no other. It's also a good recipe to use up all those homegrown tomatoes. Until recently I was blessed with their recipe. Now it will take a special place in our home- hence not having to drive to the loading dock to get it.
This is the ingredients for the Loading Docks Homemade Salsa recipe.
3 green tomatoes
3 red tomatoes
¼ cup fresh cilantro shredded
1 small red onion
3 jalapenos steamed
3 garlic cloves
Cup cheddar cheese

Place jalapenos in steamer and steam. Cut up tomatoes, onion, cilantro, and garlic and add to a bowl. When jalapenos are done cut them up and add to bowl. Add the cheese to a bowl.
Drain any juice from the bowl that has accumulated from the fresh tomatoes. Flavor with salt and a squeeze of lemon juice.
Serve with tortilla chips.
You have to make this recipe right before you serve it. This is what gives it the fresh salsa taste. Hope you enjoy this as much as we do.
