Too busy to cook tonight, leftover madness!

Quick and Easy Meals - Leftovers Rule

Therer is no time to prepare a fancy meal for dinner when the lessons, appointments, homework, work from the office and other general distractions get in the way. Don't panic, there are leftovers in the fridge and with a little creativity, they can be made into tasty meals for the entire family.

The "spices" can include any of these combined to make your special spice mix (just don't use them all together): chili powder, oregano, parsely, curry, cinnamon, basil, ginger, salt and pepper.

Leftover rice: make "dirty" rice by adding red beans, cut up bell peppers (yellow, orange, red or green), some prepared hamburger meat and spices.

Leftover hamburger meat from spaghetti sauce: add some bell peppers, onions and garlic to use for making sloppy joes, just add the hamburger buns and spices (chili powder and cinnamon in equal parts is fabulous).

Leftover hamburger meat: make omlettes, or put into puff pastry with a sliced onion, garlic and spices (bake per instructions).

Leftover seafood: stir fry bell peppers, spices and garlic and add to seafood, serve over rice.

Leftover turkey: add to prepared barley to make turkey barley soup. Or make cubes from the turkey and put chunks over a plain garden salad.

Leftover chicken, turkey or hamburger meat: Make enchiladas by putting in tortillas, spooning in salsa, rolling and putting into an oven baking dish, cover with spaghetti sauce and sprinke with cheese. Serve with sour cream, chives and guacamole sauce on the side.

Leftover eggs (scrambled): Make egg fried rice with it, add soy sauce.

Leftover vegetables (peas, corn, etc.): put in pot pie, or stir fry with leftover meat to put over rice, or use as base for hearty roast in crockpot.

It is a shame to waste food, now you don't have to when you can use any leftovers to make another great meal. This way, all food is eaten, there is little waste, and the familly can share tasty meals on the go.
