Bacon Wrapped Avocados

  • 1/3 cup Brown sugar
  • 1/2 tsp Chili powder

Instructions

  1. Heat the oven to 425 degrees celcius.
  2. In a small bowl, mix together the brown sugar and chili powder. Set aside
  3. Line a baking sheet with tin foil.
  4. Cut open the avocado and remove the pit. Slice about ¾" slices lengthwise through the avocado, and then cut through the middle to cut all of the slices in half so that you have thick chunks of avocado.
  5. Cut each slice of bacon in 3-5 pieces and wrap each piece around the avocado. Roll in the brown sugar mixture and place on the baking sheet.
  6. Bake at 425 for 10-15 minutes. Remove from the oven to a platter and stick a tooth pick in each for serving.

DIRECTIONS

  1. Preheat oven to 425 degrees F.
  2. Slice avocados into equally sized wedges. Wrap each wedge in bacon, cutting the bacon if needed. Place the bacon-wrapped avocado wedges on a baking sheet, seam side-down.
  3. Bake 12-15 minutes, until the bacon is cooked through and crispy.
  4. Serve warm or at room temperature with ranch, if desired.

  • 3 Avocados, large
  • 1/2 tsp Chilli
  • 1/4 cup Cilantro
  • 1 Hot pepper flakes
  • 2 tsp Onion powder
  • 2 tsp Powdered garlic

  • 3 tbsp Lime juice
  • 3 Splashes hot sauce

Baking & Spices

  • 2 tbsp Flour
  • 3 tsp Paprika, smoked
  • 1 Pinch Pepper
  • 1 tsp Sea salt

Oils & Vinegars

  • 1 Cooking spray
  • 1 tsp Vinegar

Nuts & Seeds

  • 1 1/2 tbsp Chia or flax seed, ground

Bread & Baked Goods

  • 1 cup Panko breadcrumbs

Liquids

  • 4 tbsp Water

INSTRUCTIONS

  1. Preheat oven to 425F. Line a baking sheet with parchment paper.
  2. Mix together ground chia seeds, lime juice, water and hot sauce in a small bowl. Leave to sit while preparing the rest of the ingredients.
  3. Mix together panko, flour, smoked paprika, garlic and onion powder, chilli powder (optional), sea salt and pepper in a medium size bowl.
  4. Slice avocado in half. Make 4-5 slices lengthwise on each side of the avocado. Carefully scoop out the avocado with a spoon.
  5. Give the eggy mixture a stir. Dip each slice of avocado in the eggy mixture and then in the breadcrumbs, making sure to coat each avocado slice fully with the breadcrumb mixture. Add water, by the teaspoon, to the eggy mixture if it gets too thick.
  6. Lay each breaded avocado slice on the baking sheet until all your avocado is used up. Leave about ¼ inch between each avocado slice (if they are too close together, the avocado fries will not be as crispy).
  7. Spray avocado fries with cooking spray and sprinkle with hot pepper flakes.
  8. Bake for 12-16 minutes until the avocado fries are golden brown and crispy.

Smokey Tangy Avocado Dip

  1. Place all the avocado dip ingredients (avocado through to onion powder) in a blender. Blend until creamy smooth. Taste, test and add sea salt, pepper and hot sauce to taste.

  • 1/4 cup Flour
  • 1 Salt & pepper

  • 2 tbsp Oil

Bread & Baked Goods

  • 1 cup Panko bread crumbs

Instructions

  1. Pre-heat oven to 400 Degrees F. Pour 1 tablespoon oil in sheet tray or baking dish; set aside.

    Squeeze fresh lime juice on avocado slices to preserve their color while baking (this step is optional). Season with salt, pepper. Dredge in flour then dip in egg and coat in panko breadcrumbs. Be sure the avocado slices are coated very well in the panko.

  2. Place in a single layer on the greased sheet pan. Drizzle with the remaining oil or spray with cooking spray. This will help the avocado slices crisp in the oven.

  3. bake for 15 minutes or until the avocados are golden and crispy. If desired, more oil can be drizzle while they are baking for additional crispness.

  4. Serve with my chipotle dipping sauce or with ranch, ketchup, or your favorite dip!

Instructions

  1. First things first, cut your avocados in half and remove the seeds. Scoop the avocado fruit out of it’s leathery shell with a spoon, but make sure to keep the avocado fruit intact.
  2. Place the avocado fruit upside down on your cutting board. With a kitchen knife, slice your avocado lengthwise into 3/4 inch (1.905 cm) wide strips.
  3. Beat two eggs in a bowl until uniform. These eggs will be used to create the outer coating on the avocados later.
  4. Now repeat the following with each of your avocado slices. 1. Coat each slice in bread crumbs.
  5. Dip your coated avocado slice into your egg batter.
  6. Coat your slice again, making sure that all of the egg batter on your slice is covered
  7. Once your oil is hot, place your breaded avocado slices into the pan. Fry the slices until they are brown on both sides. Flip the slices if necessary with kitchen tongs
  8. Alternative to Frying: Bake on a lightly greased cookie sheet in a preheated oven (400F-425F) until browned and crispy for 15-20 minutes
  9. When your avocado slices are nicely browned on both sides, remove them from your pan with kitchen tongs. Set them on a plate lined with paper towels. The paper towels will absorb any oil residue on your slices and keep them from getting soggy later
  10. Allow your slices to dry on the paper towel, but don’t let them get too cold.

  • 1/4 tsp Cayenne pepper
  • 1/2 tsp Salt

  • 1 1/2 cups Sunflower oil

Instructions

  1. Break an egg into a bowl and beat it. In another bowl, mix your almond meal with some salt and cayenne pepper.
  2. Slice each avocado in half and take out the seed.
  3. Peel off the skin off every half.
  4. Slice each avocado vertically into 4 or 5 pieces (depending on the size of the avocado).
  5. Start heating your deep fryer (or deep pan with lots of oil) to about 350°F. If you don’t have a cooking thermometer, try sticking a wooden spoon into the oil when it’s been heating for about 7-8 minutes. If bubbles arise from the spoon, your oil is hot enough for deep frying! Coat each slice of avocado in the egg.
  6. Roll each coated slice in the almond meal until you can barely see the green.
  7. Carefully lower each avocado slice into the deep fryer (or pan) to avoid splashing. It will hurt!
  8. Allow each piece to fry from 45 seconds to a minute until a light brown. Dark brown means they’ve been in there a few seconds too long.
  9. Transfer quickly to a plate lined with a paper towel to soak up the excess oil.
  10. Mix some sriracha sauce and mayo and get to munching!

  • aquafaba from 1 15 ounce can white beans or garbanzo beans

Method

  1. In a shallow bowl, toss together the panko and salt. Pour the aquafaba into another shallow bowl.
  2. Dredge the avocado slices in the aquafaba and then in the panko, getting a nice, even coating. Arrange the slices in a single layer in your air fryer basket. The single layer is important. No overlapping, please!
  3. Air fry for 10 minutes (Do not preheat.) at 390F, shaking well after 5 minutes.
  4. Serve immediately with your favorite dipping sauce!

  • 1/3 cup Arrowroot
  • 1/2 tsp Black pepper
  • 1 tsp Paprika
  • 1/2 tsp Sea salt, fine

  • 1 tbsp Water

Instructions

  1. Preheat the oven to 425°F (218°C), and line a baking sheet with foil.
  2. Slice the avocados in half, and carefully remove the pit. (To do that, place the avocado on a cutting board, and gently but firmly thwack the pit with a knife, then twist.) Cut each half into three or four slices, and set them aside.
  3. You'll need three small bowls for the dipping stations. In the first, combine the arrowroot and half the seasonings. In the second, combine the beaten egg, water and mustard. In the third, combine the pork rinds and the other half of the seasonings.
  4. Dip the avocado slices into the arrowroot, then the eggs, then the pork rinds. Lay them on the baking sheet. When they're all dipped, bake the avocado fries for 10 to 12 minutes, then flip and bake another 2 to 4 minutes. They're best enjoyed while they're fresh!
  5. *Tip: To select avocados that aren't overripe, flick off the stem. If it's white / green underneath, you still have time before it's mushy and brown. If it's brown, avoid.

Gluten-Free Fried Avocado Fries with Chipotle-Lime Sour Cream

  • 1 Kosher salt
  • 1 Pinch Kosher salt

INSTRUCTIONS

  1. Heat just oil to cover ½ avocado over medium heat in a small frying pan.
  2. Mix egg with a splash of water in a small bowl to create an egg wash. Place chickpea flour in another bowl.
  3. Slice avocados lengthwise into "fries". Peel away rind, and working one at a time, dip avocado in chickpea flour, then coat in egg wash, and then coat completely in chickpea flour a second time.
  4. Working in batches, add the avocado slices to the frying pan, 4-6 at a time, and fry until golden brown and crispy, about 1-2 minutes, flipping half way through. Transfer to a paper-towel lined plate and immediately sprinkle with Kosher salt.
  5. Serve immediately with Chipotle-Lime Sour Cream

  1. Place all ingredients in a food processor and blend until smooth. Alternatively, mash chipotle pepper with fork or spoon until broken up into small pieces, and stir in other ingredients.

Coconut-Crusted Avocado Fries

  • 1 tsp Garlic powder
  • 1/2 tsp Onion powder

  • 3 tbsp Arrowroot powder
  • 1/4 tsp Black pepper
  • 1/2 tsp Paprika, smoked

Nuts & Seeds

  • 3/4 cup Coconut, unsweetened
  • 1/2 tbsp Flaxseed

Liquids

  • 1/2 tbsp Water

DIRECTIONS

  1. Preheat oven to 400°F and place a rack on the middle shelf.
  2. Line a baking tray with aluminum foil or a non-stick reusable baking sheet and set aside.
  3. Add the flaxseed and 1 1/2 tablespoons water to a bowl, mix together and place in a fridge.
  4. Slice the avocado in half, and remove the pit. Cut each half into 4 or 5 slices, and set aside.
  5. In a bowl, combine arrowroot powder and half of the seasonings (garlic, onion, smoked paprika and black pepper).
  6. Remove the flax and water mix from the fridge.
  7. In a second bowl combine the flax and water mix with 1/2 tablespoon water.
  8. In a third bowl combine the shredded coconut and the remaining half of the seasonings.
  9. Start with one avocado slice at a time. Dip an avocado slice in the arrowroot mix, then in the flaxseed mix, and then coat in the coconut mix.
  10. Place the coated avocado on the lined baking tray. Repeat this process for the remaining avocado slices.
  11. Bake in the oven for 5 to 10 minutes, this is dependent on your type of oven. Check after 5 minutes. If the coconut is very lightly golden in some places and the avocado slices don't feel "soggy" then they are ready. If not, cook for a few extra minutes and keep checking until cooked.
