I've always loved a good banana bread. The type that is sweet, nutty, and maybe even a bit greasy from all the delicious butter.

When my mom first made Coconut Paradise Banana Bread Muffins, I was in disbelief. How in the world could I love banana bread even more? These muffins were the answer.

The coconut in the muffins and the crumbly streusel-like topping on these muffins take banana bread from good to great!

You will want to make these over and over again. One batch will not be enough.

Ingredients

  • 1 2/3 Cup Flour
  • 1/4 Cup+ 2 Tablespoons Brown Sugar, Divided
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1/3 Cup Milk
  • 1/3 Cup Pancake Syrup
  • 2 Medium Bananas
  • 5 Tablespoons Butter, Melted, Divided
  • 1/2 Cup+ 2 Tablespoons Almonds, Chopped
  • 1 1/3 Cup Sweetened Coconut Flakes
  • 1/4 teaspoon Cinnamon

Coconut Paradise Banana Bread Muffins Instructions

  1. Heat oven to 375 degrees.
  2. Mix flour, 1/4 Cup brown sugar, baking powder, and salt into a large bowl. Set aside.
  3. Beat egg in a small bowl. Stir in milk, syrup, bananas, and 3 Tablespoons melted butter. Add to flour mixture. Stir just until moistened. Batter will be lumpy.
  4. Stir in 1/2 Cup almonds and 1 Cup coconut flakes.
  5. Spoon batter into greased muffin pans, filling each muffin pan 2/3 full.
  6. Mix remaining 1/3 Cup Coconut flakes, 2 Tablespoons butter, 2 tablespoon brown sugar, cinnamon, and 2 tablespoons almonds. Sprinkle mixture over muffins.
  7. Bake at 375 degrees for 20-25 minutes.
