Vegan Breakfast Recipes – Mushroom Tofu Scramble

Mushroom Tofu Scrambler

You won’t miss scrambled eggs with delicious breakfast items that you can whip up in minutes. After becoming a vegan, I had the most difficulty at breakfast time. There is practically nowhere that you can have a good vegan breakfast. I therefore began to create my own breakfast items which I will share with you.

What you will need

1 bar tofu crumbled

½ pound sliced mushrooms

1 tsp mustard

1 tsp tumeric

1 large onion sliced

Olive oil

Salt, pepper and seasoning to taste.

Directions

  1. Saute the mushrooms and onions in olive oil until tender
  2. Add the tofu and stir mixing with the onions and mushrooms for about 5 minutes.
  3. Add mustard, tumeric, salt and pepper and stir . Cook for another 5 minutes and your tofu scramble is ready.

While this is given as a breakfast item, it is a tasty dish for anytime of day. Serve with toast or great on its own. The tofu scramble should have a yellow color from the tumeric, when done.

My doctor told me that everyone should watch soy intake as the phytoestrogens in soy mimic estrogen in the body...enjoy sparingly!

Hi Steph-B have heard that as well but everything in moderation, just like red meat, and milk that has all those hormones, eggs that regularly carry dangerous viruses. I guess in these days we just have to pick your poison when it comes to food. Thanks for visiting.
