Mushroom Tofu Scrambler
You won’t miss scrambled eggs with delicious breakfast items that you can whip up in minutes. After becoming a vegan, I had the most difficulty at breakfast time. There is practically nowhere that you can have a good vegan breakfast. I therefore began to create my own breakfast items which I will share with you.
What you will need
1 bar tofu crumbled
½ pound sliced mushrooms
1 tsp mustard
1 tsp tumeric
1 large onion sliced
Salt, pepper and seasoning to taste.
- Saute the mushrooms and onions in olive oil until tender
- Add the tofu and stir mixing with the onions and mushrooms for about 5 minutes.
- Add mustard, tumeric, salt and pepper and stir . Cook for another 5 minutes and your tofu scramble is ready.
While this is given as a breakfast item, it is a tasty dish for anytime of day. Serve with toast or great on its own. The tofu scramble should have a yellow color from the tumeric, when done.
