Vegetarian Main Courses - Cheese, onion and potato bake

Cheese, onion and potato bake is a simple, cheap and tasty vegetarian main course. It is a great standby when you don't have many ingredients in the house, is easy and quick to prepare and makes a lovely warming and filling meal.

Ingredients:

  • 1 lb potatoes
  • 1 large onion
  • 3/4 pint cheese sauce (see link on the right for cheese sauce recipe)
  • an extra handful of grated cheese
  • 1 oz butter
  • Fresh herbs (or dried herbs) and seasoning according to taste

Method:

  • Peel and slice the potatoes into 1/4 inch thick slices. Boil for 5 to 10 minutes until just cooked.
  • Chop some fresh herbs - thyme and parsley work well in this dish
  • Roughly chop the onions, and sauté in the butter with the chopped herbs until soft and just turning golden brown.
  • Warm up or make the cheese sauce
  • Once everything is cooked place the onions, potatoes and cheese sauce in alternating layers in a large ovenproof dish, finishing with a topping of cheese sauce
  • Sprinkle the remaining grated cheese and some fresh parsley on top, then bake in a hot oven for about 20 minutes, until the cheese has gone golden brown on top.

Best served with a helping of freshly steamed green vegetables or peas for a nourishing and hearty meal.

This is a favorite dish of mine but now that you have put forth your recipe I can improve on my method. I have never added herbs, an obvious ingredient and I only put a layer of cheese on top. I can't wait to prepare it again and have amended my recipe.

I often make potato-bake as a side dish to a bar-b-que.

Lovely a favourite dish with the family, thanks for sharing the cheese sauce recipe for quickness I use a packet.!! but this sounds much better.

hi gloshei - yes a packet mix is quicker, which is why I did the sauce recipe separately. I hope you'll enjoy the home made version - I think it's much nicer, and not that much more trouble to make.

Imogen, this is one of my favourites but when I make it, I have to put all of the onion on one side because my hubby hates it :o), it is yummy though; we usually have it with gammon. Voted up and shared.

Hi Jools, thanks for your comment and votes.

I have a son who dislikes onions too, I usually have to make him a separate dish with none in! Personally, I love the sweet flavour of the caramelised onions, and don't think this dish tastes of much without them.
