Vegetarian Slow Cooker Recipes
I love vegetables, I have to have my vegetables everyday without fail. I am always looking for ways to encourage my family to eat better and as we all know vegetables are a big part of eating a healthy diet. I love to use my slow cooker or better known by some people as the crock pot. There are so many ways you can change a boring meal into an extraordinary meal but one of the easiest most convenient ways is to utilize your time while you are busy at work or busy getting important things done that need your full attention is to set your cooker and forget it. I love the set it and forget it idea of cooking it is one of my all time favorite ways to cook. I love the fact my family loves what I make and that I do not have to be a slave to the stove or kitchen to accomplish this. With that thought in mind here are a few great Vegetarian recipes that are sure to please even the pickiest of palettes.
Cabbage and Peppers
I love cabbage! I love to cook cabbage in many different ways but one of my favorite ways is in the slow cooker. The smell of cabbage throughout the house is so mouth watering my family come to the table salivating!
1 head cabbage
3 green bell peppers
1 yellow onion (Optional)
Salt to taste
Seasonings you like* I like Basil, dried red bell pepper, and garlic
Rinse you head of cabbage and cut it as you like I like mine smaller but it's completely up to you.
Rinse and slice your bell peppers and onioins.
I like to hit my vegetable in a frying pan with some olive oil just long enough to give them a good flavor not to cook them just to add a layer of flavor.
Now them put them into the slow cooker with your seasonings.
Cook in your slow cooker for 4-6 hours on low or 2-3 hours on high.
Cookers are different mine is very hot so I use it on high for things that take longer low for things that take less time to cook.
You can remove your cabbage from the cooker and put in a nice serving dish to place on the table for your family to enjoy with a nice french bread yum! Enjoy!
Place your bread slices buttered with a small amount of garlic fresh or dried sprinkled on top
Bake on a baking sheet under your broiler for a few minutes until browned.
If you have more time & you like your bread toasted on both sides you can
bake at 375 until golden brown on bottom then turn over to brown on top*

Slow Cooker Vegetable Medley
1 Red Bell Pepper ~*Optional Roasted
1 Green Bell Pepper
1 -1lb Bag Frozen Corn
2 Stalks Celery
6 Red Potatoes
2 Large Carrots
1 Yellow Onion * Optional
1 Medium Yellow Squash * Optional
1 Very Small Zucchini Squash * Optional
1 package fresh Mushrooms * Optional
3 Cups Vegetable Stock or 3 TBSP vegetable bouillon Dissolved in 3 cups water
Seasonings to taste~ I love garlic, basil, dried or fresh herbs
Coarsely chop these vegetables and place them in your slow cooker lightly seasoned along with the vegetable stock:
Carrot, Potatoes, Celery, Onions, & the vegetable stock
~Slow cook for 2-4 hours on high
Now coarsely chop the remaining vegetables and add:
Bell Peppers, Squash, Mushrooms and Corn Lightly season once again.
Slow cook for 2-4 more hours
This is so delicious!
You can use any vegetable you like in this just add the slower cooking vegetables in the last few hours of cooking.
Butternut Squash is one of my all time favorite vegetables, my family was a bit sceptical though the look of squash can be very intimidating. When I come home with new vegetables I try to make it exciting so everyone will be happy to try some of it. I love to cook squash of any kind because I love all squash my family though they do not see things quit as delicious and good for you as I do. I love to use my slow cooker during the day while I am busy so I find things that are affordable and easy to prepare squash is always on my list.
Sweet Butternut Squash
Sweet Butternut Squash
1 whole butternut squash rinsed and peeled cut into cubes
salt to taste
1 stick butter
slow cooker/ crock pot
Using your slow cooker fill the bottom with just enough water to cover the bottom by a few inches. Drop in your peeled butternut squash into the slow cooker. Sprinkle lightly with salt. Set your cooker for 4 hours on high or for 6-8 hours on low.
Once you are ready to remove your butternut squash use a spoon with large holes to drain the water from it.
Use your baking sheet covered with tin foil then layer your squash across the pan. I like to keep mine in squares because my family is not to crazy about the texture of smashed squash they said it reminded them of baby food so I try to cut the cubes into bit sized pieces and place them gently on the pan so I do not smash them.
Using your brown sugar sprinkle lightly across your squash.
Now using your butter cut small squares and place them across the top of the squash.
Bake at 375 degrees or until the butter is completely melted.
This is a very easy side dish your family will love.
Baking the squash helps the squash hold more of the shape and removes some of the liquid as well giving it a more firm texture but you could serve the squash right out of the slow cooker. I love it right out of the slow cooker but my family not so much.
