A Rose Recipe: Vegetarian Chili
Ingredients
- 1 Can red kidney beans`, Drained
- 1 Can black beans, Drained
- 1 Can tomatoes (diced), Drained
- 1 Can tomatoes with green chili peppers, Drained
- 1 Can (6 oz) tomato sauce
- 1/2 cup salsa
- 3/4 cup quick cook oatmeal
- 1 spice packet chili seasoning
- 1/4 Tsp chili pepper powder
- 1/2 Tsp Pepper
- 1/4 Tsp Salt

Vegetarian Chili
1/4 onion diced
1 tsp garlic
2 tbls jalapeno peppers (diced) with juice
1 cup water
cook these ingredients together until onion is clear, then add the following:
Drain all liquids off the beans (you can rinse them too to get rid of unneeded salt)
Boil ingredients together until oatmeal is well cooked.
Can serve over rice, with olives and additional peppers optional
I throw a weekly movie night and usually serve up something cheap and yummy for the 10 or so guests- except one of them was a vegan! A little quick thinking and I have created one rocking yummy dinner and if there are any leftovers, I send it home with her for her lunch the next day. See what a good friend I am?
