Very Quick And Easy Chicken Curry

Shopping List

  1. Two lean skinless chicken breasts (500g)
  2. Tomato paste (135g)
  3. Chicken stock (3/4 pint)
  4. Curry powder (2 Tablespoon)
  5. Chili powder (1 teaspoon)
  6. One medium onion
  7. Two garlic cloves
  8. Yogurt (1 Tbsp)
  9. Vegetable oil (2 Tablespoon)
  10. Salt and pepper

Preparation

  1. Finely chop the garlic
  2. Dice the onion
  3. Cut the Chicken Breast into cubes

Cooking

  1. Get a medium non stick saucepan and add the vegetable oil and heat.
  2. Once the oil is hot add the finely chopped garlic and diced onions cook until lightly brown.
  3. Now add the diced/cubed chicken, cook until brown.
  4. Add the tomato paste over the chicken and stir.
  5. Now add the Curry powder and chili powder and salt and pepper and stir.
  6. Add the chicken stock and stir well,
  7. Bring to the boil, then reduce the heat and simmer until the sauce thickens and reduces, so you end up with a nice thick and smooth sauce.
  8. Add the yogurt stir well and serve over rice.
