Chicken Gyros Recipe

I've been making these delicious sandwiches for about thirty years now. If your looking for a sandwich that is easy to make and is guaranteed to please a crowd then this is it. When you look at this delicious sandwich you find yourself getting hungry. At least I know I do.

Here I'm going to tell you how to make this sandwich with skinned boneless chicken thighs and I guarantee you that the chicken meat in these sandwiches has some of the best flavor your ever going to taste in your life. Yes its truly that good.

You want to be sure that you purchase and use Greek Yogurt in making these delicious sandwiches. You will want to use the plain Yoplait Yogurt. The Greek Yogurt already has all the moisture removed from it and will work perfect for this recipe.

To make your Chicken Gyros your going to also need Chicken Souvlaki and Greek Cucumber Salad to go on your sandwiches but I'm going to tell you exactly how to make both so you have no worries.

Chicken Souvlaki Ingredients

1. Two Pounds Chicken Thighs With Skin And Bones Removed.

2. The Juice And Zest Of Two Lemons.

3. Two Tablespoons Minced Fresh Garlic.

4. Two Tablespoons Greek Yogurt.

5. One Half Cup Olive Oil.

6. One Tablespoon Oregano.

7. One Teaspoon Ground Sea Salt.

8. One Teaspoon Ground Black Pepper.

9. One Teaspoon Dill Weed.

10. Bamboo Skewers.

You will want to cut each chicken thigh up in about three pieces. Then thread all your chicken thigh pieces onto the bamboo skewers. Push them onto the bamboo skewer tightly. Put all of the above ingredients except the chicken into your food processor and puree everything smooth. Put your skewers of chicken in a plastic pan large enough to hold them and pour the pureed mixture over the chicken. Put a lid on the pan and place in the refrigerator over night.

This is what your Chicken Souvlaki should look like after being marinaded and cooked. It makes one of the best sandwiches in the world.

Delicious Chicken Noodle Soup Recipe

I make this delicious chicken noodle soup recipe often and believe it or not but I've worked on getting this recipe just perfect for years. At first I used a large pasta in this recipe but then I went with a small pasta because the large pasta drank up all the liquid from the soup. I precook the small pasta and then I wash and drain it very well before I add it to the chicken noodle soup. The small pasta like that in the photo works really well as does miniature pasta bow ties.

I always start this soup by putting a fryer chicken on to boil in chicken stock. I sometimes have my own homemade chicken stock on hand but if I don't I purchase the large quart size boxes of chicken stock.

Now to start with I add the below to the stock pot where I have place the chicken before I add the stock.

1. One Cup Diced Fresh Carrots That I Have Peeled.

2. One Cup Fine Diced Celery.

3. One Cup Fine Diced Yellow Onions.

4. One Tablespoon Minced Fresh Garlic.

5. One Teaspoon Ground Sea Salt.

6. One Teaspoon Ground Black Pepper.

7. One Tablespoon Fresh Fine Chopped Rosemary.

Once I have everything in the stock pot I then pour enough chicken stock in the pot to cover the chicken fryer I have in the pot already.

I bring the ingredients of the pot up to a boil and then reduce the heat to medium. I let the chicken and the vegetables continue to cook until the fryer is done and starts to come apart.

I then carefully remove the chicken from the pot and allow it to cool before I remove the skin and bones and cut the chicken up into small pieces. I then return the chicken to the pot.

At this point I've already cooked and drained two cups of small pasta and I put it into the stock with the chicken and the vegetables. Be sure that when you cook your pasta that you slightly undercook it. Wash the pasta very well and drain it before you add it to your chicken stock.

Guess what? You just made one off the most delicious chicken noodle soups that you'll ever eat. Yes it really is that good. I know every one I've made it for loves it. Once you make it post a comment and let us all know how it turns out for you.

Here were going to be making a delicious homemade chicken noodle soup. In this recipe were going to be using elbow macaroni noodles and they work out really great in this soup but do drink up the broth really quickly. So be sure to slightly under cook your elbow macaroni noodles and wash and drain them very well before they get added to your chicken stock.

Here were once again going to use a chicken fryer. Put your well washed and drained chicken fryer into the pot and then add the below ingredients to the pot.

1. One Cup Peeled And Diced Carrots.

2. One Cup Fine Diced Yellow Onion.

3. One Cup Fine Diced Celery.

4. One Cup Well Drained English Peas.

5. One Tablespoon Minced Fresh Garlic.

6. One Teaspoon Ground Sage.

Chicken And Dumplings Recipe

I remember my late mother Virginia Walker making the most delicious chicken and dumplings that I ever ate. She did some things to chicken and dumplings that other southern cooks wouldn't dare. And her chicken and dumplings were some of the best in the world. I've taken part of her recipe and added to it so that it is the most perfect chicken and dumplings that you'll ever eat in your life.

Ingredients For Your Chicken And Dumplings

1. Chicken Stock. ( About Two Quarts )

2. Cooked Diced Chicken Meat.

3. Two Small Cans Cream Of Celery Soup.

4. Two Small Cans Cream Of Chicken Soup.

5. One Teaspoon Sea Salt.

6. One Teaspoon Ground Black Pepper.

7. One Cup Carrots Peeled And Diced Fine.

8. One Teaspoon Rosemary Dried And Crumbled Very Fine.

9. One Half Cup Plain Flour Dissolved In One Cup Chicken Broth.

10. One Teaspoon Lemon Pepper.

11. Self Rising Flour.

12. Whole Milk.

You want to start by combining your chicken meat, carrots, chicken stock, lemon pepper, rosemary, salt, pepper, and soups in a large stock pot. Bring your ingredients up to almost a boil and while they are heating up put three cups of self rising flour into a large bowl and add enough whole milk to make a thick dough. You want your dough so you can scoop up large tablespoons of it and drop it into your hot pot of ingredients to make your dumplings. Three cups of self rising flour should give you plenty of dumplings. Pour the flour and chicken broth into a blender and puree it smooth. Then pour and whisk it into your pot of chicken and dumplings.

Turn the pot down to simmer and let it cook and simmer for about thirty minutes. Wash a small basket of cherry tomatoes and drop them into boiling water for a couple of minutes. Drain the water away and peel the skins from your cherry tomatoes. Add a few of these tomatoes to each serving of chicken and dumplings. You can also hard boil a few eggs and when done peel and crumble the eggs up fine. Garnish the top of each serving of chicken and dumplings with these crumbled hard boiled eggs.

I tried the chicken gyros and thought it wasn't too bad except that the greek yogurt left a very sharp taste after being marinaded with the marinade on the recipe...I think that if or when I do this recipe again I will marinade it with the bottle of greek dressing that we used with the gyros, the taste wasn't quite as sharp. Otherwise my wife and I really liked it!
