Yummy Chocolate chip cookies without the gluten.
Chocolate Chip Cookies, with out the wheat, eggs, and milk.
Our son is gluten free because we noticed him having a really hard time handling his asthma. Once we eliminated foods, (and playing with play dough, cause it has wheat too) his difficulties in breathing seemed to subside. Here is our twist on your old fashioned chocolate chip cookies.
With this particular recipe I used two types of flours. You could use one if you like to.
1 cup of Rice flour
1 ¼ cup gluten free all purpose flour
1 cup sugar
½ cup of packed brown sugar
½ cup of Crisco shortening
½ cup of water (you may not need it all)
1 tsp vanilla extract
1 tsp salt
1 tsp baking soda
12 oz. diary free (or regular) semi sweet chocolate chips
Pre heat the oven to 350 degrees
Mix all dry ingredients together then add vanilla, and softened (I use melted) shortening. Add half of the water and mix adding more water until you get cookie dough consistency. Then place teaspoons size drops of dough on an ungreased cookie sheet about an inch apart.
