Simple Food Easy to take on a Picnic or Great to eat Anytime
Simple and Delicious
Picnics - what does the mind conjure up for you, long lazy afternoons in the sun, gourmet baskets laden with food and wine, a rustic lunch set under a tree, family, friends, relaxation, romance, games, time. A picnic can be all of these but with busy lives the thought of organizing a picnic can often be daunting. Food that is easy to make and easy to transport are ideal foods to take on a picnic keeping it stress less. These are some food ideas that are tasty, easy to prepare and are inexpensive to make.
Zucchini Slice
This recipe has been around for a long time and has most likely been made many different ways with different ingredients but this is the recipe that our family enjoys the most and every time we make it there is never any left.
Ingredients
3/4 Zucchini depending on size but should be enough for a cup and a half
4 large eggs
1 cup of grated cheese
1/2 cup of oil
1 large onion
3/4 to 1 cup of Self Raising flour
4 slices of Bacon/ Prosciutto or Ham
Salt and Pepper to taste
Method
Turn oven to about 180 degrees electric and grease a 20 centre metre square tin or baking dish
Grate Cheese
Cut and dice onions
Cut and Dice bacon/prosciutto/ham
Beat eggs
Measure Flour
Beat eggs and oil together, then add grated zucchini and mix well
Add meat, cheese and onion one at a time
And lastly add flour and salt and pepper to taste.
Baked in the middle of the oven for about 25/30 minutes
We prefer this slice when its moist so be careful not to over cook it and because we also like it warm we rest it for five minutes when it comes out of the oven then slice it and wrap it in several layers of foil to keep it warm. It can be served as a whole meal with a salad or eaten for breakfast as an alternative to breakfast eggs.
Avocado Dip
Ingredients
2 Ripe Avocado's
400 grams of Sour Cream
2 cloves of Garlic
The Juice of a Lemon
Sweet Chilli Sauce
Method
Mash avocado's
Chop and dice garlic cloves finely
Combine avocado's with sour cream
Stir in chopped garlic
Add lemon juice and chilli sauce to taste and serve with any type of crackers.
Or take a Bagette and sprinkle with oil, cut a garlic clove in half and rub over bread, sprinke with sea salt and pop under the grill until brown. Parmesan cheese can replace the garlic if preferred or simply butter and sea salt is a delicious alternative with the dip.
Passion Fruit Tarts
This is an easy quick and delicious sweet treat that are prepared in no time for a dinner party, and are easy to prepare and transport for picnics. The sourness of the cream seems to balance out the sweetness of the chocolate perfectly.
Ingredients
Small individual short crust pastry cases found in most supermarkets
200 grams of a good White Chocolate
200 grams of Sour Cream
2/4 Passion fruit depending on size and according to desired tartness
Method
Melt White Chocolate
Stir in Sour Cream
Add pulp from Passion Fruit
Place in pastry cases and refrigerate for 30 minutes
Pack in tins ready for picnic
