A Few Quick German Summer Soups
I grew up in a neighborhood with many different ethnic backgrounds. It was not unusal to have dinner over at one of my favorite Greek girlfriend's house, or bring home a treat from one of my other German friend's home.
My Mom and Dad had such an array of their own specialties, my life around the kitchen and dinner table was always a treat.
I would like to share with you a few quick German summer soup recipies. I hope you enjoy them as we have and still do.
FRUIT SOUP
Blueberry, Cherry, Raspberry or Strawberry Soups
Ingredients for 1 pint:
1/2 lb of fruit
1 1/2 pints of water
1/3 cup of sugar
1/2 tbsp of lemon juice
1 tbsp. of corn starch
Prepare and wash the fruit thoroughly. Crush fruit with a potatoe masher. Add the water and boil the soup for half an hour.
Put in sugar, lemon juice and cornstarch ( cornstarch should be stirred up with a tablespoon of water). Boil the soup until it is quite smooth. Serve and Enjoy.
COLD RICE SOUP WITH APPLES
Will serve 6 People
3/4 cup of rice
2 qts. of water
2 lbs. sweet sour apples
1/2 tsp. of salt
1/2 cup sugar
Preperation: The rice is washed and boiled in 2 cups of water for 5 mins. Then this water is poured off and 2 qts added to boil 1 hour.
In the meantime peel the apples and remove the core, cut them up in 1/8ths and put into rice, also cut up the 1/2 lemon into slices and put into soup.
Add salt and sugar
Boil all this 20 mins.
If the soup is too thick, add some more water.
It can be served warm, but it tastes better when cold.
You can improve the soup by adding 1/2 pt of white wine and more sugar.
MILK SOUP
Will serve 6 People:
2qts.milk
1 small stick of cinnamon
1 tbsp of lemon sugar
1/8 lb of sugar
1 pinch of salt
1/8 lb of cornstarch
Preparation: 1 1/2 qts. milk, sugar, spices and salt, let this mixture come to a boil.
The flour is mixed with 1/2 qt. of milk and stirred into the boiling milk, then boiled for 1/4 hour. Stir in 1 egg yolk then serve.
