    What about risotto? Quick and easy, doesn´t need much attention. You just put it on the stove and wait :-)

    Omelets are quick and easy.  I like to put bacon and cheese in mine.  To make it really quick, you can use precooked bacon.

    One of my " go to " dinners that is inexpensive, easy and definitely not time consuming is a shrimp & pasta dish.  It takes about 20 to 25 minutes from start to finish & everyone in my family loves it...even my VERY picky son.

    Ingredients:

    1 pound Linguine or any pasta
    2 tsp. sea salt for seasoning pasta water
    1 pound cooked, cleaned, frozen shrimp
    1 bunch green onions
    4 mushrooms ( whatever is your favorite )
    Extra Virgin Olive Oil
    Garlic Salt
    Fresh parmesan cheese

    Directions:

    Bring 4 qts. water to boil for pasta & shrimp
    Once boiling, add pasta, and salt; cook for 10 minutes or as specified on packaging.  After 5 minutes, add shrimp.

    While pasta and shrimp are cooking, chop green onions diagonally for a pretty presentation, and slice mushrooms.

    When pasta is finished boiling, drain, add approximately 4 tbs.( or so ) olive oil, and garlic salt to taste ( I don't measure...I just sprinkle for about 5 seconds ).  Toss... 

    Add green onions and mushrooms.

    Sprinkle parmesan cheese on top.

    This is delicious when served with warm, crusty french bread and a tossed green salad.

    Pair with a nice Chardonnay
