How To Make Bearnaise Sauce
One cup Clarified Butter.
One Teaspoon Fresh Ground Black Pepper.
One Half Cup White Wine.
Two Tablespoons Fine Chopped Shallots.
One Tablespoon Fine Chopped Tarragon.
One Teaspoon Chopped Parsley.
One Teaspoon Ground Sea Salt.
One Teaspoon Ground Cayenne Pepper.
One Teaspoon Fresh Squeezed Lemon Juice.
Four Egg yolks
Put all the ingredients in a blender and mix together very well.
Pour into a small pot and heat stirring often. Whisk it and stir all the time it is cooking. Remember keep the heat low or your eggs will cook.
Remove from heat and serve at once. Excellent on any steak or Prime Rib.
