    Wow, there are a lot. Here in the Philippines, we use coconuts in every kind of meal from main dish to desserts.

    Bicol Express- Strips of pork cooked in coconut milk and (green and red) chilies.

    Buko Salad (Coconut meat salad with mixed fruits)

    I love the dessert, Hawaiian Dreams.  It's quick and easy to make, plus SOOOooo YUMMY :-)  Something about the coconut & pineapple combo that really makes my mouth happy.  I have the recipe as a hub, titled "Recipe: Hawaiian Dreams" if you'd like to try it out.

    Martha Washington Candies! I make them every year and I just can't get enough. People who hate coconut love that candy it is my all time favorite thing!

    This is difficult to answer as there are too many. In Thailand, coconut is used in many dishes and desserts. Coconut milk is a common ingredient in most Thai soups to tame the heat. My personal favorite is Thai coconut fish stew.

    coconut ladoos. Made from dry coconut and is one of the most tasty coconut dishes I have ever tasted

    I love all types of Thai curry and Vietnamese curry. The coconut milk adds a rich,  creamy taste and texture to the dish. Last night I just made a vegetarian curry with tofu, root vegetables, and LIGHT coconut milk. Healthy, low-fat, and yum-o!
    As for coconut flakes, I add them in a lot of desserts and bread.

    Manchester Tart, a dessert we used to get at school dinners in the UK, pastry base with a layer of jam on top of which was a cold egg custard, more jam and dessicated coconut.  When I eat one now, I am 8 again!

    For dessert, buko salad is always my favorite.

    We also use it for plenty of dishes, we extract the coconut milk first.
