I do love the international interpretations of vegetarian dishes and enjoy learning the heritage and origins. Sadly the UK ( where I live) interpretation of a lot of vegetables is to boil or roast them and serve them bland!
Love South American food and Cajun spices. Unsure what Canadian dining experience consists of although I've visited Canada we mostly ate out in various ethnic restaurants.
