My grandmother made icebox pickles. They're super easy, though my husband will see this and wonder why I never made them for him.
2 cups sugar
a cup of vinegar
1 teaspoon salt
6 to 8 cups sliced cucumbers
1 sliced onion (IF you like onions, leave out otherwise)
Mix everything except the cukes in a saucepan over low heat - just until the sugar is melted.
Put the cucumbers in a large bowl or a quart mason jar. (pack well if jarring). Pour the liquid mix over the cucumbers. Stir to coat. The cucumbers will 'sweat' and add their own juice to your mix. Let sit in the fridge overnight, stir, and then put in any container that has a lid - a bowl or jar will work.
