What are your favorite garden fresh/summer veggie recipes?
I am growing a summer garden this year, and also buying some extra veggies through a co-op I am wondering if anyone can share some of their favorite ways to prepare fresh veggies? I know I will have an abundance - I am looking for simple recipes and other ideas for eating fresh veggies!
Depending on what you have, I would slice up and saute with some olive oil, add some garlic and a bit of fresh lemon juice, grated parmesan cheese and enjoy. This would work with a variety of vegetables like peppers, onions, carrots, squash, eggplant, spinach, cabbage, broccoli, tomatoes.
Or you can slice them up and eat them raw with some ranch dressing -- raw would work with peppers, carrots, broccoli, cucumbers, squash, eggplant, tomatoes. It all depends on your taste. Hope this helps.
I like tomatoes. The best tomato recipe I can think of it's to slice them and put them on a sandwich with mayonaise, a little salt and a dash of pepper. Mmmmm!
Without a doubt, a strawberry pavlova! Fresh strawberries, meringue and whipped cream! Yum But still light and refreshing. Love the summer.
Well Mr Stanley Reese took my exact answer. Nothing beats a tomato sandwich. Also so many can be eaten raw with a dip. I find I work better in the garden whilst eating cherry tomatoes. It doesn't get any fresher than that. Enjoy your garden bounty.
What my sweetheart does with fresh asparagus is awesome. She saute's it with eggs and spices, yummy. Also, all salads are good but nothing beats this simple recipe. Tomatoes, cucumbers, onions all sliced thinly and doused in vinegar and oil with fresh basil on top. Extra yumm....
A couple of my favorite summer veggies are spinach and asparagus. Spinach is great since it is one of the first veggies ready to eat from your garden and sometimes you can get a couple of crops from it and it is very versatile in the kitchen. I love to use it as a substitute for lettuce on sandwiches, it's great in salads as well. If you want to cook it it is fantastic in omelets, quiche and I like it sauteed in olive oil with fresh garlic and a little balsamic vinegar.
As for asparagus my favorite recipe is pretty simple. Put your asparagus on a baking sheet and drizzle with olive oil, salt, pepper, garlic pepper, and Parmesan cheese, bake at 350 for about twenty minutes or until tender turning them once half way through. Simple, but so good.

fresh salsa can be made a variety of ways and is always good. Our favorite is tomatoes (variety), tomatillos, green bell pepper, banana peppers, a bit of jalapeno, garlic, green onions, lime, cilantro, and a pinch of sugar and salt to bring out the flavors.
You can experiment easily and do a variety of combinations in a food processor. Store in a sterile jar in fridge and use within a week - but it won't last that long!
We also do sun dried tomatoes which I have a hub on if you want to learn how to do those. They are FABULOUS, and you can keep them for several months - but again they won't last that long lol.
Zucchini's make great chips! slice 1/4 inch thick at most (the thinner the better) and roast in the oven on low temp like 250 or so for about 40 minutes. Sprinkle them with whatever spice blend you like beforehand.
If you grew eggplant you can make a stuffed eggplant that is excellent. Hollow them out and then stir fry that with extra firm tofu, mushrooms, onions, peppers, and whatever other veggies you have on hand and then place that mixture in the hollowed out eggplant shells. You can sprinkle the top with cheese if you desire, and then bake at 350 until cooked through and the "shells" are tender and easy to put a knife through.
fresh tomato sandwiches are yummy but so are fresh cucumber sandwiches! Slice cukes thin, lightly toasted bread, mayo, salt, pepper...yum! ratatouille is delicious as well. eggplant, summer squash, zuchinni, tomatoes all sliced and place in baking pan.add salt and pepper and drizzle with olive oil and bake. When done, sprinkle with a little parm cheese if you'd like and bake again just till golden brown.

Asparagus is in season here in Michigan. I wanted to know what are other people's favorite ways to prepare it. I like to roast mine in a 500 degree oven for 10 minutes. Then add some salt, lemon zest, and freshly ground nutmeg. The nutmeg works unexpectedly well.

Can I use fresh instead of canned tomatoes?I would like to use fresh tomatoes since I don't have canned. I have tomato sauce if that would help. It's a crock pot taco soup. Can I just cook them the same way I would make homemade spaghetti sauce?
