Tonight I barbequed chicken-kabobs, corn, burgers and franks.  In addition we had potatoe and macaroni salad.  Pretty good meal if I say so myself!

Pasta. Quick and easily heated in the oven while finishing a few tests for my last summer course.

I had fixed a layer of sliced potatoes, with layer of cooked carrots, layer of fried sauage, another layer of sliced potatoes, all sitting in cream of mushroom soup!  It was awesome!

Italian sausage, mixed with zucchini, potatoes, add 5 eggs to hold it all together. Sprinkled with garlic, salt and pepper. It was lovely.
My husband decided he really wants to retire and to have that kind of money we have been eating in more.  He has even been cooking more. I came up with this while looking in the freezer for a Popsicle.  I have been craving potatoes and the sausage was just staring at me. Zucchini was the only veggie ripe in the garden. .

the other day we took some leftover roast chicken along with  a bag of Green Giant Steamers brocolli and carrots in garlic and herb sauce, and some onions sauteed in olive oil, mixed them in a skillet with a little chicken broth, salt and pepper and some corn starch to thicken it. We put that over some linguini. It was a quick, easy and delicious spur-of-the-moment meal.
