Yesterday we were removing the young tilapia from our lakes. They are prolific breeders and we need to thin the population occasionally. This time we kept a few back to deep fry. They are small about 5-10 grams. They were crunchy and with salt, quite tasty. Because of the size, they aren't gutted, just washed. This is similar to whitebait that I have eaten prepared like this.
That said, I still prefer to eat adult tilapia.
