I love chicken backed with grapefruit, and rosemary.
Take one whole chicken
2 garlic cloves 1 clove chopped
1 small onion
1 bunch rosemary
4 tabs butter
salt and pepper to taste
cut in half onion, and grapefruit. place inside of chicken with whole garlic clove and 1/2 bunch rosemary, salt and pepper( only one half of the grapefruit)
under the shin put 2 tabs of butter, chopped garlic and the rest of the rosemary.
squeeze other 1/2 of grapefruit juice over chicken, rub outside of skin with the other 2 tabs of butter( if cutting down on butter you can use olive oil here) salt and pepper.
Bake 400 for 40 minutes to a hour or until it reaches a temp of 180 degrees F
