    As I am in Australia, it's summer time for Christmas. Right now, it's a toss up between making a "plum pudding ice cream" or berry meringue tart.

    For the "Plum Pudding Ice Cream", I make a mocha ice cream and then work in smashed up mature Candied Peel Christmas Cake.

    For the berry meringue tart, I make a buttery shortcrust pastry base which is baked blind, Then make an Italian Meringue (that's a cooked meringue). Gently mix a mix of berries (all berries except strawberries work) and some fresh red currants into half of the meringue. Put that in the pastry case. Then cover that with the rest of the meringue and bake until the meringue is lightly colored. One of my favourite Christmas dinner desserts - and it's so pretty with the different hues of blueberries, raspberries, blackberries etc. And nice and light too, after a heavy meal.

    Pavlova, so I will literally be whipping cream, which I bought today!  I got some frozen strawberries and raspberries to go on top, but I was thinking of making up some kind of Christmas pudding ice cream/cream with mince meat chopped nuts and brandy...something like that.  I've got a Christmas pudding that my daughter who works in a delicatessen has bought home.

      That is one of the best desserts for a Christmas dinner, and it cannot do any wrong. It is one of my favorites along with a Pecan pie, yummy. Those two, one with the whip cream and the other with ice cream on top or on the side of it.
