I still love the my home version of an egg McMuffin. Toast your English Muffin. While its toasting, scramble two eggs in a pretty small bowl with just a little milk, maybe two tablespoons. Put in microwave for about one minute (depending on microwave). You want the eggs to be all the way cooked, not runny but not overcooked. Be very careful when you take the bowl out of the microwave. They should be nice and fluffy.
Meanwhile, spread butter on the toasted muffin (jelly optional). Add salt and pepper to scrambled eggs to taste. Slide the scrambled eggs onto the muffin in one piece. Add your favorite cheese slice or shredded cheese. I love pepper jack cheese. Then place the other muffin slice on top and voila - a very tasty sandwich. With everything hot, it should melt together nicely. The eggs may comeover the sides, but that just makes it better. Enjoy and lmk if you like it.
