    Here is my favorite chicken recipe:

    Chicken Soup with Rice

    This chicken soup is easy to make, and is also very healthy. It is also recommended when someone has a cold or the flu. What makes this soup special is the fact that rice is added making it a full meal.

    Ingredients

    2 medium sized onions, chopped
    3 cloves garlic, sliced thinly
    4 medium sized carrots, coarsely chopped
    2 big turnips, chopped
    3 stalks celery with leaves, chopped
    1 whole big chicken with the skin removed
    10 cups water
    1 teaspoon brown sugar
    1 bay leaf
    1 teaspoon salt
    1 teaspoon ground black pepper
    1 cup brown basmati rice
    Fresh herbs of your choice

    Preparation

    With the exception of the rice and fresh herbs, place all the ingredients in a large pot and bring to the boil.

    Cover, reduce heat and simmer at medium heat for at least an hour. Take out chicken, debone and cut meat in pieces. Return meat to the pot, add the rice and simmer for another 20 minutes (add more water if necessary).

    Stir in the herbs and serve.

    Well chicken is considered healthy to begin with however the preparation is where the term healthy comes in. In general, baking, broiling, grilling or boiling is generally the healthiest way to prepare chicken. Deep fried is always the most unhealthy. When I bake chicken I try to most often use boneless skinless chicken breast, however some recipes may call for you to bake with the skin on. If you decide to bake with the skin on my habit is to remove the skin before eating my meal as a lot of people leave the skin on to retain moisture and flavor. It's all in your personal preferance. Grilling is a favorite way to cook as well. I will give you to recipes that I have written and tried that you can try. They are both very tasty and somewhat healthy. You may want to adjust the sodium intake by reducing the salty spices such as liquid smoke or Cajun spices. As far as your fat intake on these it should not be to bad I do not know the nutritional values however they are far better then any deep fried meal or skillet sauteed meal may be in tems of fat intake and cholesterol intake.
