Tofu is really easy to make, its similar to making yogurt. You add an acid such as vinegar or lemon juice to soy milk, allow it to curdle, then strain off the whey. Line a colander with cheesecloth and dump in the curds. Wrap the cheesecloth around the curds and place a plate on top, then something heavy like soup cans on the plate. Drain the curds overnight and you'll have tofu in the morning.
