Without seeing the recipe you are using, I can't really make any suggestions about ingredients.
Don't over bake it. Test it a few minutes earlier than you have been baking it for.
Try using a slightly smaller pan for a taller loaf.
Adding some ground walnuts to the batter at the end can help, too.
When it's cool, be sure to wrap it tightly in plastic wrap if your issue is your breads not *staying* moist.
