True ginger ale is alcoholic, and comes from those areas of the world where ginger grows naturally, probably as tomics or preserved sauces. It is made from pounded ginger stem, water, sugar and yeast, once you have your starter, just cut it in half at the end of each fermentation, this will grow wth each batch and last about six batches before you need to make a new one.
Five fingers of ginger stem, peeled and pounded, you can use powdered ginger.
2 teaspoons of yeast powder
cup of sugar, this can be modified to taste later
gallon water, hand hot
juice of one lemon
mix the ingredients and pour into sterile demijohn
put in warm place and leave for a couple of weeks, check airlock every day to ensure it doesnt dry out and let vinegar bug in.
