You can make a smoothie/shake. But its difficult without other fruits
You can make a nice rhubarb porrage. Healthy, and if you avoid too much sugar a healthy way to get some fruit. :-)
rhubarb sauce is good tasting and simple to make. just boil it and add some kind of sweetner to taste.
I add rhubarb to my vegetable stews. But I have to say that a cranberry rhubarb pie can really hit the spot sometimes.
