Cast Iron Veggie Pizza is as quick as it comes and there are so many ways to change it up to your liking.
Buy some pizza dough from your grocer and cut it in half, as you'll only need half of it for a pizza for one. Roll out the dough until it is about 9-10" in diameter. This will be big enough to fit in your pan and come up the sides to hold in all of the yummy toppings and sauce. Of course, you can always roll the dough out a little more and then stuff the crust with cheese!
Preheat your oven to 375 degrees.
Using an 8" cast iron pan, LIGHTLY coat the inside of your pan (sides included) with a bit of olive oil. Sprinkle some seasoned bread crumbs onto the bottom of the pan. Lay your dough into the pan. Spread a few tablespoons of prepared tomato sauce or diced tomatoes in sauce onto the dough.
Add your favorite toppings. I added chopped garlic, baby corn, sun dried tomatoes, basil, shredded carrot, and pine nuts. Top it off with some parmesan and mozzarella cheese.
Bake for 20 minutes. This time is for baking in a convection oven. Traditional oven users will need to add approximately 5-10 minutes to their cooking time. Cheese should be melted, slightly browned (not burnt) and crust will be a nice golden color.
