I think you should bake them a day or two before Christmas if possible. I usually keep my home made cookies for a week in a small container that is sealed very good (I want to teach my children they shouldn't eat everything at once).
If you assume that the person who gets your cookies won't eat them immediately and will store them for a few days, it leaves you a day or two to bake them before giving them away.
You can keep it in a fridge for those two days.
I usually get lots of cookies from my mother in law and I freeze them every year. That way I can eat them for a few weeks and they are fresh every time I take them out.
