Recipe: Tortilla BBQ Chicken Pizza
You can make this recipe in the oven quickly or on the grill. Cooking it is quick so you will not make the house hot in the Summer months.
I have not made this recipe on the grill yet. I recommend grilling on a low setting on the top rack. The tortilla will toast up quickly on the grill so watch it very closely. I will add any future comments after I try it on the grill.
The nice thing about this recipe is that each family member can make an individual pizza to their own liking.
You will need...
BBQ Sauce (we like Sweet Baby Rays)
Grated Cheese ( 1/2 Mozzarella and 1/2 Cheddar)
Cubed Chicken (You can make the chicken or make it easy by purchasing a roasted chicken or chicken strips)
Add any other ingredients you prefer on your BBQ pizza.
Preheat the oven to 400* degrees.
Squirt some BBQ sauce on the tortilla. Spread it around with the back of a spoon or a basting brush. Sprinkle shredded cheese over the BBQ sauce. Top with chicken, onions, bacon bits and any other yummy toppings you prefer. Top with a little more cheese to keep the toppings in place.
Note: The tortilla can't hold too many toppings. If there are too many toppings they can slide off the tortilla during baking. Keep the toppings towards the middle of the tortilla with a 1" edge clear of toppings to help avoid spill overs.
Bake or grill your pizza. As mentions above the grilling is up in the air to the heat and time to finish. The baking takes about 10 to 12 minutes on a metal baking pan. I use my pizza stone. The stone will need to go in the oven during the preheating. Transfer the pizza to the hot stone carefully with a spatula to help you.
Remove pan or stone from the oven. Transfer the pizza to a plate and cut with a pizza cutter or knife into 4 to 6 pieces... ENJOY!
