Dulong Dulong Omelet (Silver Fish)

Uncommon Dish
Last month I was invited by a friend to eat with her at her home, I was happy that I'll have some time to chat with her even for just an hour. She have cooked a tiny fish mixed in a scrambled egg, and wondering what kind of fish is that. She said it was called Dulong - Dulong (tinier than anchovies), I was finally have the chance to eat such very simple fish but so tasty. The scrambled egg for me is salty enough to be partnered by a cooked rice, combined with a side sauce vinegar and minced garlic. I'm very full after eating it, and I'm very happy to share this simple recipe with all of you that I believe its uncommon dish out there.
So after that I've tried to make it on my own, I've looked for the same fish in nearby market and it was a success!, I find some for about 50 Peso or $1 for every 250g. Then I hurried to go home and for about 15 minutes I've finished preparing the egg and minced onion. To make it short in less than an hour I've made a simple dish that I believed is nutritious enough. My advice try please try it and hope you can enjoy it too..

Fresh Dulong
Ingredients
- 1/4 Dulong a.k.a Silver Fish
- 2 Eggs
- 1 Teaspoon Cornstarch
- 1 Medium Size Onion, thinly chopped
- Salt and Pepper to taste
- Cooking Oil for frying
Instructions
- Beat Egg
- Then add the cornstarch, pepper, salt and onion
- Mixed it all until said ingredients well incorporated
- Add the Dulong Dulong
- Heat frying Pan and pour the cooking oil
- Then scoop the mixed Ingredients by a about 30g or 2 tablespoon in the heated oil
- Flip the omelet to cook the other side after 3 or 5 minutes
- Once the omelet is brownish and well cooked set it aside and drain the oil for a few minutes
- Serve hot and enjoy with side sauce like ketchup or vinegar mixed with minced garlic.
