Easy Low Carb Stuffed Mushrooms

STUFFED MUSHROOMS with PEPPERS GENOVESE

 

2 dozen giant mushrooms

1/2 cup of cooking oil

2 cloves garlic, minced

1/4 cup Italian red onins, finely chopped

1/2 cup fresh bell pepper, finely chopped

4 tablespoons aged parmesan cheese, grated

1 tablespoon rolled cracker crumbs 

2 tablespoons chopped capers

1/2 teaspoon garlic salt

1/4 teaspoon black pepper, finely ground

 

Directions:

Slice the stems from the mushrooms.  Finely chop the mushroom stems, wash them and dry them. 

Gently heat 1/2 of the cooking oil.  Use heated oil to saute' the garlic, bell peppers and onions. 

 After 5 minutes add the mushroom stems and saute' for 5 minutes more.

Add cracker crumbs, capers, parmesan cheese, salt and pepper to the saute'. 

Stuff the mushroom caps with the mixed saute'.  Place stuffed mushroom caps in a well greased baking dish, and sprinkle with remainder of the cooking oil.  Bake for a quarter of an hour in a moderately hot oven (375 F). 

Remove and serve Hot.
