My favorite recipes with cucumbers
I grow cucumbers in my garden each year, and each year when I have too many sitting on my kitchen table during the peak of the season, I start to try and remember what I made with them the year before. Well, this year, I'm taking a different tactic, I'm actually going to write them down.
So here goes, my easy garden fresh cucumber recipes, which includes an appetizer, two salads, and how I eat them raw.
I hope to add some new recipes each season, so come back each year to see my new recipes and appetizers.
Cucumber Sandwiches
My wife makes this all the time, I think it may have been modified from a Weight Watchers recipe. The nice thing about this recipe is even the kids can make it for a snack.
Ingredients
- 8 oz package Dry Italian Dressing Mix
- 8 oz cream cheese
- 4 flour tortillas
- 1 cucumber
Instructions
- Step 1 - Mix the Italian dressing mix and the cream cheese together.
- Step 2 - Spread a thin layer on one tortilla.
- Step 3 - Cut the tortilla into 8 triangular pieces (like a pizza)
- Step 4 - Slice the cucumber and cut into halves. Place each half onto one of the triangular tortilllas.
- Step 5 - Serve. Or chill for for later in the refrigerator.
Basil Cucumber and Tomato Salad
Here's another recipe I love to make. This cucumber and tomato salad is actually modified from a zucchini and tomato recipe.
Ingredients
- 1 cucumber
- 3 medium tomatoes or 15 cherry tomatoes
- 1/2 an onion
- 1/2 cup Red Wine Vinegar
- 1/2 cup Vegetable Oil
- 1 teaspoon basil
Instructions
- Slice cucumber, dice tomatoes or quarter the cherry tomatoes, and slice onions. Mix in the Oil, Vinegar, and basil. Refrigerate for at least 2 hours.
