Mango Curry Chicken Salad‏

Today I wanted to make me some chicken salad because I really like the taste of when I make it maybe it’s because I don’t use chicken breast I use chicken thighs then I make it really healthy by adding Greek style yogurt instead of mayonnaise.

But what really takes it over the top is the curry powder t makes the chicken sing to your taste buds when you put it in your mouth.

Mango Curry Chicken Salad‏

Ingredients

2 1/2 cups of boneless chicken thighs small diced

1/2 cup of Greek yogurt

1 teaspoon of curry powder

1/2 cup of cubed mango

1 cup of dried cranberries

1/2 cup of walnuts, coarsely chopped

1/3 cup of mozzarella, cut into small cubes

Methods

Using your charcoal grill or gas grill.

Grill your chicken thighs then dice into small pieces and set aside now using a medium size glass bowl combine your Greek yogurt and curry powder then blend together and then add your chicken thighs a long with the mango, cranberries, walnuts and mozzarella then mix very well so it can all come together and serve on the bread of your choice or some lettuce leaves and enjoy..
