Grilled Chicken with a Sweet and Sour Salsa

The cook out yesterday was great every on really love the food and the fireworks and yes the tasty drinks also but when we were inside cleaning up I notice some chicken breast that was left marinating in the refrigerator so I decide that I would grill them off tomorrow and use some of the leftovers fruits to make some type of salsa for me and the few friends that will be stopping by so I decided to share with you how I made a Grilled Chicken with a Sweet and Sour Salsa that I think you will enjoy.

Grilled Chicken with a Sweet and Sour Salsa

Ingredients

4 - 4-oz. boneless, skinless chicken breasts

2 limes, juiced, divided

1 teaspoon of basil leaves

2 - 4 medium peaches, peeled, pitted and cubed

1 medium Granny Smith apple, peeled and into cubes

1/4 teaspoon of ground allspice

1/4 teaspoon of ground cinnamon

1 - 2 teaspoon of honey

1 Tablespoon of chopped fresh basil (optional)

Methods

Let’s start working on this meal by getting your grill ready:

Now take your chicken breast and using a zip lock bag pace your chicken in the zip lock bag and sit to the side for a few minutes then grab a small glass bowl and add half the lime juice with the dried basil pour this mixture over the chicken then seal the bag make sure you get as much air out as you can. Make sure every piece of chicken is coated and sit it in the refrigerator for at least 1 hour or longer.

While the chicken is inside the marinade lets work on this salsa: Grab yourself a medium glass bowl add the fruit along with some allspice, cinnamon, honey and the last part of lime juice wrap the bowl in plastic wrap and place it in the refrigerator to keep it cool.

Now it is time to start grilling first thing we do is coat the grill rack with nonstick cooking spray. Preheat grill to medium-high (350°F to 400°F). Remove chicken from marinade; discard marinade. Season chicken with salt and pepper to taste. Place chicken on grill. Grill 7 to 10 minutes per side or until an instant-read thermometer registers 165°F. When your chicken breast is ready remove from the grill add to your plate then top with salsa, sprinkle with fresh basil serve and enjoy.
