What is a Pancake?

A pancakes is a thin, flat cake, made of batter and baked on a griddle or a fried pan. It is probably the oldest form of the bread and it is known in various forms all over the world. Variety of pancakes came as a result of a relative easy baking on the hot stoves or on a griddle. English people added ale to the batter. French, Polish and German pancakes are thin and served with jam or jelly. Russians have blintzes which are usually prepared with buckwheat, are thin and crispy pancakes. They are commonly served with sour cream and caviar or filled with cream cheese or jam. Mexico has tortillas filled with meat and vegetables and topped with some sauce. American people call pancakes buttercakes, flapjacks or griddlecakes. They are usually made with some baking powder which is added as a rising agent and served with some syrup.

How to Make Perfect Pancakes

This is my favorite way of making pancakes!

Let me show you how I make make them.

The most important thing is the temperature of the frying pan and the preparation of the batter. The perfect temperature of the frying pan is when oil starts lightly smoking. It is the time to pour the mixture in.

Another important matter is that you have to get right consistency of the mixture. It can't be to runny because will fall to bits but it can't have any lumps either. You have the proper consistency when you take a spoon of it and it just falls lightly of it. Remember to leave the mixture for 20 minutes so that flour has the time to absorb into the milk.

To prepare homemade pancakes use medium sized pan it would be easier to make them.

Serve pancake hot with some sugar and lemon.

2 cups of flour - sifted and cleaned

2 and a half teaspoon of baking powder

3 tablespoons of granulated sugar

Half tablespoon salt

1 to 2 cups of milk

2 tablespoon of melted butter

B) Steps:

1. Put the flour, baking powder, salt and sugar into the strainer.

2. Beat eggs and milk into a separate bowl.

3. Mix egg and milk with flour. Stir until the mixture turns smooth.

4. Add butter to the mixture.

5. Add one-fourth to one-half milk if needed or when the batter looks thick.

6. Prepare the frying pan. Pour one fourth cup of batter when it is hot enough to cook.

7. Toss the batter to cook the other side. Cook until it turns brown.

8. Serve the pancake with maple syrup, honey, cream or strawberry (more on strawberries).

  • 2 eggs, separated
  • 480g (2 cups) smooth ricotta
  • 55g (1/4 cup) caster sugar
  • 300g (2 cups) self-raising flour
  • 375ml (1 1/2 cups) milk
  • 30g (1/4 cup) cocoa powder

How to make chocolate pancakes with ricotta:

First of all put the flour and cocoa powder into a bowl, add sugar and make a well in the centre. Whisk ricotta, milk and egg yolks together in a separate bowl.

Next add ricotta mixture to the flour mixture and stir until the mixture is smooth.

Cover the mixture and set aside for 20 minutes.

Take an electric beater and whisk the egg white in a dry bowl until soft peaks form. Next fold the egg whites into the pancake batter.

Take a frying pan and brush it with a melted butter and heat over medium heat.

Pour ½ cup of batter into the pan, allowing room for spreading. Cook it for 1-2 minutes until the bubbles appear on surface and pancakes become golden underneath. Turn the pancake and cook for 1-2 minutes. If you want to keep them warm, put in the warm place. It can be oven for example.

  • 2 eggs
  • 1 cup rice flour
  • 1/3 cup potato starch
  • 1 packet sugar substitute
  • 1/2 teaspoon salt
  • 2 cups water
  • 3 tablespoons tapioca flour
  • 4 tablespoons dry buttermilk powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon xanthan gum
  • 3 tablespoons canola oil

How to make gluten- free pancakes?

Take a bowl and mix together rice flour, tapioca flour, potato starch, sugar substitute, dry buttermilk powder, baking soda, baking powder, salt and xanthan gum.

Next stir in eggs, water and oil and blend it well.

Then, take a medium large griddle or skillet and put it on the medium high heat.

Put batter onto the skillet and cook until bubbles begin to form. Put on the other side and cook until golden brown.

Serve hot with some dressing if you like.

Coconut milk pancake recipe

Ingredients:

  • 2 Tablespoons coconut oil or butter, melted
  • 2 eggs
  • ½ cup coconut milk
  • ¼ teaspoon coconut extract or vanilla
  • 1/8 teaspoon salt
  • 1 teaspoon sugar
  • 1/8 teaspoon baking powder
  • 3 tbsp sifted coconut flour

How to make homemade coconut milk pancakes?

Take a bowl and blend together eggs, oil, coconut extract or vanilla extract, coconut milk, sugar and salt.

Next, take another bowl and combine coconut flour and baking powder and mix thoroughly.

Mix wet ingredients with dry ingredients and stir until smooth.

Heat 1 tablespoon of coconut oil on a griddle or in a skillet.

Put batter on the hot surface and cook pancakes for about 1-2 minutes. Then turn pancake and again cook for 1-2 minute.

Serve hot with some dressing if you want.
