Making your own stock for soup
Make your soup spectacular by simply making your own homemade stock. It takes some extra time however it makes a world of difference when it comes to creating great soup. This is a recipe for a simple vegetable stock, of course you can make beef, chicken or fish stock as well.
Ingredients for vegetable stock
- 1 onion, chopped
- tablespoon oil
- 2 leeks, chopped
- 4 carrots, chopped
- 2 parsnips, chopped
- 4 celery, chopped
- Add ingredients and cook for 5 minutes. Do not brown.
- Add 3 1/2 liters of water and bring to a boil, skimming the surface when needed.
- Add 2 bay leaves, 4 garlic cloves and a dozen peppercorns. Then reduce heat and simmer for an hour.
- Pour your stock into a sieve over a bowl to extract any solids. Press gently to extract all the liquid from the stock.
