How to make Corn Flake Biscuits - Cookies

My Mother gave me this particular recipe many years ago. She always said that she was not a good cook, but we never went hungry.
This Cornflake biscuit - (I believe in some places they may be called cookies) recipe was something that she liked to make, she always used Kelloggs Corn Flakes,  and they tasted yummy when she made them and my family (bless them) are of the same opinion when I make them, which is quiet often I must admit.
So here below is how to make these delicious biscuits .
I'm sure that they are worth a try, at least once :)

The Corn Flakes will make them crunchy on the outside, the sultanas giving them a softish texture on the inside. A nice combination :)

Ingredients for Kelloggs Corn Flakes Biscuits

Listed below are the ingredients you will need to make these Kelloggs Corn Flake Biscuits.

I always try to use Kelloggs Corn Flakes as I believe that they are much more crunchy after cooking.

I also like to use genuine Australian Sultanas as I find they are much juicer than some of the imported Sultanas.

This adds to the contrasting texture of the Crunchy Corn Flake outside and the moist soft centers.

Ingredients
Quantity
Butter
8 ounces (227 grms)
Sugar
3/4 Cup
Eggs
2
Self Raising Flour
2 Cups
Sultanas
1 heaped cup. Some times I add a few more sultanas to give more flavour!
Corn Flakes
The quantity of Corn Flakes is hard to judge . It depends on how many biscuits you get from the mixture. I get about 40 with this amount of mixture so try starting with 3 cup fulls!

My method

First, coarsely crush the Corn Flakes in a separate bowl and put them aside for later.

Then using an electric mixer, beat the butter and sugar until the mixture is light and creamy !

Add the Eggs, sifted flour and Sultanas a little at a time. Mixing with a wooden spoon until well combined. (Do not add the Corn Flakes yet)

Roll a heaped teaspoon of the mixture into a ball about the size of a large walnut .

Roll the ball sized mixture into the previously crushed Corn Flakes, making sure they are well coated.

Repeat this until all the mixture has been used. The above ingredients will supply you with about 40 biscuits.

Place the Corn Flake biscuits on a flat tray lined with baking paper, leaving room for each biscuit to spread a little.

Cook for 20-30 minutes in a moderate oven on the middle shelf until the Corn Flakes biscuits are Golden Brown.

They will be a little soft when you remove them from the oven but they will harden as they cool.

Place on a wire rack and allow to cool.

Enjoy :) :)

Warning

There is a down-side to this recipe :) I did actually stop making these for some time.

My family kept eating them!

No seriously, I mean eating them , the whole batch would disappear in what seemed like 5 minutes. (((( Whoosh))))  Gone !!!!!

So please be warned that they will not last.

I have no idea how long they will keep, they just do not last long enough for me to find out :) :)

My mom made these as well oliversmum. I used to love these as a kid, so was lucky my wife made them for me most of my adult life!

The recipe was pretty much the same, and they are delicious!

oliversmum , it is 5 weeks now and my mouth is still watering at the thought of your corn flakes biscuits. They must be nearly due for cooking again. With a little help from a friend, these corn flake biscuits could be in the oven in the blink of an eye, with a few extra sultana's in the mix.

Yes I always get a big smile and hug when they get a share of these biscuits, then the next day come back for more.

Now I have to find a better hiding place.

Ahhh like Earnest above mentioned, thankyou for reminding me of something I used to enjoy immensly in my childhood, I have forgotten about these biscuits for about 30 years.

To our American friends reading this, I beleive there are Australian goods importers in Texas, California and Ohio and they possibly may import Corn Flakes, if you wish to try the recipe.

These sound yummy - I'll have to try them with the kids sometime. I like to used crushed corn flakes for breading homemade chicken nuggets and put honey in the egg for a little sweetness. Corn flakes are a very useful ingredient.

They do taste great, and it would be wonderful to get help from your children as well as being a fun thing to do with them.

My Granddaughter (7 Y.O) helps me sometimes and we have a wonderful time making these biscuits plus other recipes.

I have never used Corn Flakes to coat chicken, but will try it now, the taste would be a lot nicer than bread crumbs. Thank you for the idea.

I keep them in my cupboard for that very reason, there is just so much that you can use them in.

Wonderful invention I must say. Do you have any more recipes I can make at home with simple custard or oat. This is really nice and can be used to keep the children busy

They are really nice.

It is an old recipe, my mother and grandmother used to make them,so it's been around awhile in Australia.

Kelloggs Corn Flakes finely crushed are also great to coat chicken filets or fish for a change.

Well that may be possible,but they could get crushed the way they throw things around in the mail.:)
