Including green vegetables in every meal is one of the most cited guidelines of healthy nutrition. No matter what your diet preferences or choices are, vegetables are recommended in each and every nutritional plan you will ever come across.

So why are vegetables ranked as the ultimate healthy food?
Green vegetables are the ideal foods because they have all the healthy benefits & nutrients, with none of the downfalls:
- vegetables have a high water and fiber content –specially soluble fiber,
- vegetables are easy on your digestive system, which means they are easy to digest and do not drain all your energy into digestion (which is why we feel so light after eating them and still wanting to actually move after eating);
- vegetables are the only and best source of the natural minerals and vitamins our body needs to work properly, stay healthy and look good;
- vegetables have a low glycemic index (GI), which ensures that the energy they provide will be gradually released into the blood stream, avoiding the undesirable negative insulin peaks that leave us feeling tired, make us store fat and increases our risk factors for type II diabetes;
- vegetables have a low caloric count.
What is Nopal?
Nopal is a vegetable made from a young segment of prickly pear, or "Nopal Cactus", peeled to remove the spines. The fleshy flat hand-sized pad is widely eaten in Mexico as part of many stews, salads and sides.
Including Vegetables at Breakfast
Eating scrambled eggs with vegetables is an excellent way to include some healthy greens in your breakfast.
Eggs have been demonized by popular ignorance, but they actually are a very good source of protein, and an excellent way to activate the metabolism and start the day full of energy. They will NOT increase your cholesterol if you don’t eat them with loads of bread and/or bacon, sausage, ham, etcetera.
Nopal Health Benefits
Of all the healthy veggie choices, nopal is my favorite one and probably the best of bests. It is rich in insoluble, but especially soluble, natural fiber, vitamins A, C, K, B6 and riboflavin, as well as minerals like magnesium, potassium, manganese, iron and copper. Nopales also reduce the overall glycemic effect of a meal, which helps to lose weight and control diabetes.
How to Make Scrambled Eggs with Nopal
Recipe for 1 Serving:
1 nopal chopped
1 tablespoon finely chopped onion (you don’t have to actually measure it but I decided on 1 tablespoon just to give you an idea)
1 small Serrano chili finely chopped
2 cage free chicken eggs
½ tablespoon vegetable oil of your choice
Salt & Pepper
Poor the oil in a previously heated pan and sauté the onion with the chili; after a minute or so, add the chopped nopal, and cook for a few minutes more until it changes color. It will turn from a vibrant green to a yellowish green; this means it is cooked.
While the nopal is cooking, beat the eggs in a separate bowl, season with salt and pepper, and add to the pan once the nopal has changed color. Stir for a minute or two until the egg cooks and you are done!
Nopal has been found to enclose multiple medicinal effects that have proven useful in the treatment of obesity, diabetes, high cholesterol (hypercholesterolemia) and gastrointestinal & digestive disorders. This is a book that focuses on the effect of nopal in some of these common problems.
Nopal and Natural Medicine
Due to the many health benefits of Nopal, numerous nopal products (which go from tablets to powder to liquid extract) have been developed in the natural medicine industry. If you are planning on using them, do not drop your allopathic medication cold turkey -particularly in the case of Diabetes-, start taking them as a complement and consult with your physician.
